Now that it is fall, the Hokies are at their best…football season has begun! Though we may not be living in Blacksburg anymore, we still know when to kickback and enjoy an in-house tailgate on a Saturday afternoon. Without further adieu, I give you Tequila Chicken Hoagies (or Hokies).
Tequila Chicken Hoagies
Original recipe serves 4.
2 large chicken breasts
1 medium red onion
1 medium red bell pepper
1 medium jalapeño
3 cloves of garlic
3 tablespoons cilantro
3 limes, squeezed
3 shots (ounces) of tequila
½ cup of cream cheese
1 ¼ cup of cheddar cheese, shredded
4 sub rolls
1. Grill chicken breasts, over medium-high heat, seasoning with salt and pepper, approximately 20 minutes. Then shred.
2. Julienne onion and bell pepper. Chop jalapeño, cilantro and garlic.
3. Add veggies, lime juice, and tequila to skillet. Cook over medium heat for 5-8 minutes.
4. Use aluminum foil to create a makeshift pan with two inch edges. Add contents from skillet to aluminum foil container. Make sure aluminum foil container is not leaking.
5. Evenly layer chicken, cream cheese, and cheddar cheese over contents of aluminum foil pan. 
6. Create lid out of aluminum foil and seal the edges of the aluminum foil container.
7. Place container on grill cooking 10 minutes on each side.
8. Slice the container open and serve!
