Once a month we usually have an impromptu wine and cooking party at our apartment with Wil and Corey. These parties are so spur of the moment that they almost always begin with a trip to the grocery store. It takes a few laps around the grocery store for one of us to get inspiration for dinner (which is almost always heavily influenced by Italian or Mexican food). Corey is a great cook so I usually let him pick what we eat. This week we decided to create our own recipe.
Chicken Burgers
Serves 4
1 lb ground chicken
1/2 small onion
1/2 jalapeño
1 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon cumin
2 teaspoon garlic powder
1 teaspoon lime juice
1 egg
4 slices of cheddar or pepper jack cheese
4 whole-wheat buns
- Set oven to broil on high. Prepare sheet pan with light spray of olive oil.
- Place ground chicken in a large bowl. Add spices, lime juice, and egg.

- Finely dice the onion and jalapeño add to meat. Mix well.

- Spray light coat of olive oil on hands to prevent meat from sticking. Take 1/2 cup of meat mixture and shape into round patties. Place on sheet pan.


- Broil for 6-8 minutes per side.
- Place one slice of cheese on each burger for last-minute of cooking.
- Serve on whole-wheat buns with 2 tablespoons of chopped avocado salad

Chopped Avocado Salad
2 large avocados
1 teaspoon lime juice
1/2 jalapeño (diced)
1/4 small onion (diced)
1 teaspoon garlic powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1 teaspoon fresh cilantro (chopped)
- Combine all spices and one avocado (sliced), in a small bowl and mash.
- Chop second avocado in bite size pieces and fold into mixture.

A great night for a new recipe, but not such a great night for cards…if you added Melissa and my score together, we still would have lost to the boys.
