Heather and I are always looking for a great deal on food, wine, clothes, gym classes, well…pretty much on anything! So when Wil calls us and says that there are $5.00 lobster tails at Safeway we jumped right on it. Neither of us had every cooked lobster (Heather had never even had it) but that was not going to stop us. We opted for a simple and very beautiful presented lobster by butterflying and baking the lobster.
Baked Lobster Tails
Yield: Serves 4
Ingredients:
8 lobster tails (4-5 ounces each)
1 stick of butter
1 tbsp. Garlic
Process:
1. Defrost lobster tails (I know it seems simple but trust me its important! Hint: place lobster tails in a dish/bowl so they do not leak all over your refrigerator).
2. Slice the lobster with kitchen sheers from top to bottom, stop before the tail.
3. Gently remove the meat from the sides of the shell. Begin by loosening meat from sides of shell using your fingers. Do not detach the meat from the tail (this is pretty difficult, just take your time and it’s ok if you crack the shell). 
4. Pull the shell away from the meat and to the sides.
5. Slide your fingers between the bottom of the shell and the meat and lift the meat up, pinch the shell back together, and then place the meat down on top of the shell. You now have officially created a butterfly lobster tail!
6. Melt the butter in the microwave and mix in the garlic.
7. Spoon the butter mixture generously over each lobster. Leave extra for dipping when lobster is cooked.
8. Cook at 450 degrees for 15 minutes (this is for a 4-5 oz lobster tail) and enjoy!
This dish pairs perfectly with some roasted red potatoes and sautéed asparagus! We bought 6 red potatoes for $1.58 and 1 bunch of asparagus for $3.45.
The meal for 4 people totaled to $45.03. In a restaurant this meal would cost at least twice as much. Love saving money!!
