Holiday Madness has begun! Only two weeks until Christmas which means the Christmas baking, shopping, partying, gifting, movie watching, dining, and drinking are in full swing! This weekend Melissa and I hosted a cookie swap with some of my girlfriends from home. We all made two different types of cookies (plenty more cookie recipes to come). For Melissa and I it turned into a baking marathon on Friday night. We started with one of my Christmas cookie favorites, Pecan Tassies. These cookies are like mini pecan pies.
Pecan Tassies
Yield 25 cookies
Crust
3 ounces cream cheese
1/2 cup butter
1 cup flour
Filling
1 tablespoon butter, melted
1 egg
3/4 cup brown sugar
1 teaspoon vanilla
2/3 cup chopped pecans (unsalted)
1. Soften cream cheese and butter, mix.
2. Add in flour.
3. Chill for at least one hour.
4. Mix filling.
5. Shape dough into each mini muffin tin, be careful there are not any holes in the dough or the filling will burn.
6. Fill each shell 3/4 of the way full. 
7. Bake at 350 degrees for 16 minutes.
