Oven Baked Cajun Fries

I took a flex day on Friday to go to the doctor, run some errands, and do some much needed cleaning of the house.  While cleaning out the kitchen I realized I had a whole package of bacon and some leftover potatoes from a week or so ago. I kept both of these in mind when I went to the grocery store to pick up some things for dinner. I decided to make my homeade cajun fries and bacon wrapped steak and shrimp.Oven Baked Cajun Fries
Yield: 4 servings

2 Idaho Russet Potatoes
1 tsp salt
1 tsp black peppter
1 tsp garlic powder
2 tbsp. Cajun Seasoning (adjust based on how spicy you want them)
1/4 cup olive oil

1. Preheat the oven to 425 Degrees
2. Peel the potatoes and cut into long thin slices (julienne cut)
3. Place the potato slices into a bowl and coat with olive oil and all of the seasonings (Salt, peper, garlic, and cajun). Mix with your hands until all potatoes look evenly coated
4. Drizzle olive oil onto a cookie sheet and lay all of the potatoes out flat
5. Cook for 10 minutes. Flip the fries. Cook for 8 minutes. Flip the fries. Cook for a final 6 minutes or until desired consistency.
